Elevate your salad game with this quick and delightful Peanut Butter Cucumber Salad – a crisp and nutty fusion that's perfect for a refreshing bite.
Ingredients:
• 2 medium-sized cucumbers
• 2 tablespoons peanut butter ( I used the Crunchy peanut butter by The whole truth brand available in India)
• 1 tablespoon soy sauce
• 1 tablespoon rice vinegar
• 1/2 tablespoon Chilli sauce
• 1 teaspoon honey
Recipe:
1. Wash the cucumbers thoroughly. Using a vegetable peeler, create cucumber noodles by peeling long, thin strips.
2. In a small bowl, whisk together peanut butter, soy sauce, chilli sauce, rice vinegar and honey until well combined. Adjust sweetness and saltiness to taste.
3. Place the cucumber noodles in a large bowl. Pour the peanut butter dressing over the cucumber noodles and gently toss until well coated.
4. Allow the salad to marinate in the refrigerator for at least 15 minutes. This enhances the flavours and lets the cucumber noodles absorb the dressing.
