Ingredients
- 4 medium-sized potatoes, peeled and diced
- 1 large onion, finely chopped
- 2-3 green chilies, finely chopped
- 2 dry red chilli
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- 1/2 teaspoon turmeric powder
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
- 2 tablespoons cooking oil
Process
1. In a pressure cooker or a vessel, boil potatoes until they are fork-tender. Once done, drain and set aside.
💡 Tip - Add a pinch of salt while boiling potatoes
for that extra flavour boost.
2. Once the potatoes have cooled down, peel them and cut them roughly into medium sized chunks.
3. Put pan on medium flame, add some oil and bring it to heat. Add the mustard seeds, cumin seeds and asafoetida.
4. Add chopped green chilies and red chillies. Sauté until fragrant.
5. Add sliced onions and cook until golden brown.
6. Add in some turmeric powder and Mix well.
7. Add the boiled potatoes. Give them a gentle mash for a delightful texture. Season with salt and let it cook for 8-10 minutes on low flame, allowing the flavours to meld.
8. Garnish with some fresh coriander leaves.
Voilà ! Serve hot with chapati, poori, or dosa.
